Barbados Blackbally
Barbados Blackbellies: a national treasure
I had the opportunity to visit Barbados on a trade mission with the Maryland Department of Agriculture. This small island, only 2½ times the size of our nation's capitol, with its idyllic weather and fantastic seaside scenery, quickly became one of my favorite places.
Geographically speaking, Barbados is the eastern most island in the Caribbean chain, the only, I was told, not to have developed from a volcano. As a former British colony, it is rich in the Queen's traditions. Barbadians speak "British" English, play cricket and drive on the "wrong" side of the road, just to note a few of their customs.
It goes without saying that Barbados is a popular tourist destination for Europeans, Americans, and Canadians, who go for rest and relaxation, to imbibe in the world's oldest rum and to eat flying fish, the national dish. But, while traveling around the island, tourists can't help but notice the abundance of "brown sheep" grazing in small pastures or tethered alongside the winding roads. In fact, most foreigners mistake these sleek, badger-faced animals for goats, when in reality, what they are seeing are Barbados Blackbellies, a hair sheep that is one of the most reproductive efficient breeds in the world and truly one of Barbados's "national treasures."

The Barbados Blackbelly
The Barbados Blackbelly is an indigenous breed to Barbados. It descends from sheep brought to the islands from West Africa during the slave era. Blackbellies are "antelope like" in appearance, brown tan or yellow in color, with black points and under-parts. Both ewes and rams are should be polled or have only small scurs or diminutive horns. They may have some visible fuzzy wool undercoat within their hair coat, but it should shed along with the hair each year. White splotches or speckles on the shoulder, back or rump are permitted.
According to documented history of the breed, Barbados Blackbelly sheep should possess the following traits: 1) tolerance of hot and humid climates; 2) resistance to parasites; 3) resistance to foot problems; 4) a-seasonality of breeding; 5) high rate of twinning (but low rate of high multiples; 6) ease of lambing; and 7) lean carcass on a moderate-sized frame.

GENERAL APPEARANCE
The first impression of a good BB sheep is that of a noble animal, strong, alert, well muscled and clean cut, unlike its woolly cousins of the temperate world. The sheep is as tall as it is long. It gives the impression of muscular fitness without any look of clumsiness or softness. The ideal sheep is stamped with a look of quality and nobility-difficult to define, but unmistakable when present. Secondary characteristics are strongly marked in the adult, thus clearly identifying the ram from the ewe at first look.
HEAD
The head is noble with a typical "roman" nose. The head of the ram is distinctly masculine and that of the ewe feminine. The muzzle is wide and strong with firm lips. The lower jaw is colored black. Incisor teeth must meet the dental pad.
EARS
The ears are pointed and when alert stick out from the side of the head parallel to the ground. The inside of the ears is black. Some variation in the size of ears is permitted. Floppy ears and half ears or less ("elf" ears) are discriminated against.
EYES
The eyes are brown in color and almond shaped. A wide black mark runs from the base of the nose on each side to the crown of the head. Inverted eyelids are discriminated against.
POLL
Barbados Blackbelly rams are polled or may have small, loose scurs. Ewes are polled.
NECK
The neck is strong and muscular, clean cut without loose folds of skin. Occasionally wattles are found, but are discriminated against. In the case of an adult ram, a mane is present covering the neck right down to the chest. An armor of coarse hair covers the entire neck.
FOREQUARTERS
The shoulders are laid on flat and both the upper arm and the shoulder blade are well muscled. The forelegs viewed from the side are straight. The pasterns are strong and springy; these sheep are known for their jumping ability. The forelegs are black on the front from the knees down.
HINDQUARTERS
The hindquarters should be muscular with a long sloping croup (rump). The hind legs viewed from behind should be straight. Any tendency to cow hock or bandiness (pulled together as tied together) is discriminated against.
FEET
The hooves should be well formed and kept trimmed and should show no signs of foot rot.
BODY CAPACITY
Body capacity should be relatively large in relation to the size of the animal. The body should be deep and wide with well-sprung ribs.
TOPLINE
The withers are higher than and sloping into a level back. The loin viewed from the top should be broad and strong. The croup (rump) should be long and gradually sloping. Short steep croups are to be discriminated against.
TAIL
The tail should be long, reaching to the top of the hocks as the sheep is walking. The tail should not be docked. The color should blend in, with the exception of a distinct white tip of no more than 1 1/2 in. being permissible.
COAT
The ideal BB sheep has a coarse hair coat. There should be lanolin to repel ticks and other ectoparasites. Some wooliness is tolerated. A wooly coat that is not shed is a disqualifying trait. The sheep should not be shorn.
COLOR
The color is typical of the breed with a black belly. The color on top of the back can vary from light fawn through brown to reddish brown.
GOALS FORIMPROVINGTHE BREED
We prefer improvement through selective breeding over out-crossing and purging to preserve the genes and qualities of the sheep originally imported from the Island of Barbados. This is what we call "preserving the integrity" of the breed and is of utmost importance.
Some important things to select in your brood stock:
Slick hair with smooth blending colors
Strong bones and soundness
More muscled legs and backs for more choice meat
Ewes with a larger carrying capacity for multiple fetal deliveries and larger lambs
Ewes with adequate udders
Ewes with a large pelvis for ease in birth
Ewes with non-seasonal estrus and quick breed-back
Ewes with good maternal instinct
Rams that hold their heads high when alert
Stock that reproduces the best qualities
Ewes with black on the back of the udders all the way up and on the underside of the tails
Rams with a black mane all the way down the front of the neck

Baked Chicken with Peas
Serves 4 Hot Poultry Main Course Gluten Wheat Dairy free Turkey Europe Asia Ingredients
4 large Chicken Quarters
450g/1lb Fresh Green Peas
12 Button Onions
1 tbsp Olive Oil
1 tbsp Tomato Puree
2 large Tomatoes, diced
Salt and Black Pepper Instructions1. Preheat the oven to 200C, 400F, Gas Mark 6. Place the chicken in large saucepan together with enough salted water to cover. Bring to the boil then reduce the heat and simmer for 15 minutes, skimming the surface from time to time to remove the fat. 2. Meanwhile, place the oil, tomato puree and tomatoes in a medium sized saucepan and cook over a medium heat, stirring from time to time, until the tomatoes are soft. Season with salt and pepper. 3. Remove the chicken from the saucepan, reserving the cooking water, and place in large casserole. 4. Add the tomato mixture, onions, peas and enough of the reserved cooking water to just cover. Bake in the oven for about 40 minutes until the chicken has browned and is cooked through. Serve hot.

Turkey Tat
Turkey Tetrazzini is something my mom used to make all the time. It's a Southern spaghetti casserole with turkey (duh), mushrooms, and lots of cheese. It's a good comfort food and not a bad way to get rid of Thanksgiving leftovers. (In case you were wondering, yes, I did use turkey from last Thanksgiving in this. It keeps for a very long time in the freezer.)
Ingredients:
8 ounces of spaghetti, broken into 3-inch lengths, cooked, rinsed, and drained
1 1/2 cups of shredded cheddar cheese, divided
1/4 cup Parmesean cheese, divided
2 to 3 cups of diced cooked turkey or chicken
2 tablespoons of diced pimentos (optional)
1 tablespoon butter
4 ounces sliced mushrooms
1/4 cup chopped onion (white or yellow)
1 can of cream of mushroom soup
1/2 cup chicken broth
1/4 cup dry sherry
salt and pepper to taste
Directions:
Combine spaghetti with 1 cup Cheddar cheese and half of the parmesean cheese. Add turkey and pimentos.
In a skillet, melt butter and saute mushrooms and onions until just before tender. Add sherry and cook until tender.
Add the contents of the skillet to the turkey mixture along with the remaining ingredients and gently stir to combine.
Place in a greased casserole dish and cover with the remaining cheeses.
Cover with lid or tin foil and bake at 350° for about 45 minutes. Serve immediately.
As with the pimentos, Another optional ingredient would be some drained canned tomatoes. If you're going to add tomatoes, make sure to reduce the liquid in other ways (such as cutting back on the broth) or you'll end up with a bit of a soup. I did a double batch and it doubled wonderfully. This isn't a bad main dish substitute for macaroni and cheese, and you could probably play around with adding different vegetables to make it a full-on meal. Mmm-mmm good.

Ayam ini Jika dilihat sekali imbas seakan-akan ayam hutan malahan bulu dan coraknya sama!! tetapi yang dapat membezakan ayam ini adalah saiznya lebigh besar berbanding ayam hutan dan juga ekor(lawi) lebih panjang dan Curve ke bawah!! bunyinya juga sangat nyaring!!
